- 4 medium-sized golden beets, destemmed and washed
- nonstick cooking spray
- 3 garlic cloves, peeled
- 2 tablespoons tahini
- 3 tablespoons lemon juice
- 1 tablespoon ground sweet curry powder
- 1/2 tsp salt (optional)
- 1/4 tsp black pepper
1. Preheat oven to 375 F. Place unpeeled beets and garlic on a large sheet of foil. Spray generously with cooking spray and fold foil to make an air-tight packet. Place in oven and bake for 45 minutes or until beets are fork tender. Set aside to cool, then peel the beets.
2. Place all ingredients in a food processor and blend until smooth.
3. Serve room temperature or chilled.
