- Non-stick cooking spray
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/8 teaspoon ground allspice
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 4 (4-oz) pork loin chops
- 1 tablespoon apricot preserves
- 1 diced mango
- 2 tablespoon chopped cilantro
- 1 tablespoon lime juice
1. Lightly spray grill rack with cooking spray. Preheat grill on medium-high.
2. In a small bowl, stir together paprika, thyme, allspice, and cayenne. Remove and set aside ¼ tsp of the mixture.
3. Sprinkle 1/2 teaspoon salt and paprika mixture over the pork. Using your fingertips, gently press the seasonings so they adhere to the pork. Lightly spray with cooking spray.
4. Grill the pork, covered, for 5 minutes on each side, or until it registers 145°F on an instant-read thermometer. Remove from the grill and let stand for 3 minutes.
5. In a medium bowl, using a fork, briskly stir the apricot spread until softened. Stir in the mango, cilantro, lime juice, and reserved paprika mixture.
6. Serve the pork topped with the sauce.
