Tilapia Tacos

Serves 8

Ingredient list:

  • 2 tsp. olive oil
  • 1 chopped onion
  • 1 sliced green pepper
  • 1 sliced jalapeno pepper
  • 4 tilapia filets
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • 8 corn/flour tortillas
  • 1 chopped tomato
  • 1 lime (in wedges)

Preparation:

Add olive oil to a skillet over medium heat and cook onions until tender, add peppers and continue cooking until tender. Season tilapia filets with salt and pepper and add to skillet. 

Cook about 3 minutes per side or until the fish starts to flack. Warm tortillas according to the package.

On each tortilla, serve a half aa filet topped with the onion and pepper mix, and tomato. Garnish with a lime wedge.
